USAID-sponsored HEART trainee displays fried rice dish prepared in a practical learning session. Trainees are members of the food cluster of the Cockpit Country Local Forest Management Committee.
The Protected Areas and Rural Enterprise project (PARE) partnered with the HEART NTA to host a Commercial Food Preparation course at the Maldon High School in St. James. Twenty-seven members of the South West Local Forest Management Committee (LFMC), involved in food preparation businesses, benifitted from the training that covered nine core units for the HEART NTA Commercial Preparation certification. The units being taught include health safety and security procedures; workplace hygiene procedures; food organization and preparation; and prepare basic cooking methods.
The course began on April 14 and ended on May 16 with an assessment, which required the participants to plan and prepare a five-course meal. Upon completion of the course, the participants were confident they will be better equipped to manage food establishments registered for operation under the Flagstaff Maroon Heritage Tour and Trail business enterprise plan.
